Roasted Garlic Artichoke Dip

How do you make Hot Artichoke Dip? This may be the most popular dip in history – and the simplest. The most basic recipe calls for combining a cup each of canned artichokes, mayonnaise and Parmesan cheese, and bake at 350 degrees F. until bubbly. But where you go from there is a playground for the imagination -- making this a holiday party take-along favorite.

The Web site Cooks.com lists 143 recipes for Hot Artichoke Dip, and a quick sifting through reveals additions of everything from onions to sour cream to chopped pimientos.

Spinach is by far the most popular add-in, and the Web site Cdkitchen.com has 45 variations on the “variation” of the dip using spinach.

Our version of this classic, originally published in our Desperation Entertaining cookbook, relies on roasted garlic to provide the punch. Try it and let us know what you think.

Artichoke dip has always been a staple at our house...anytime we have company we mix up a batch. One night over the Thanksgiving holiday we made it and my two sons ate almost the entire batch in about 10 minutes before the guests hardly had a taste! Our recipe is similar to yours but has a dash of Worcestershire sauce to give it a little zest. When we were first married, my husband traveled with his job a great deal. He would bring me a cookbook from each city he visited. Our artichoke dip recipe is from "Miss Daisy Entertains" from Miss Daisy's Tea Room in Nashville. I don't know which I love more, the recipe, or the memories it always brings to mind of our early years!

In our Desperation Entertaining cookbook we have a Southwestern version of this dip that has green chilies and chili powder, garlic and cumin. It's one of my favorite variations, too. I really wonder if you could do anything to mess this up.....peanut butter and ketchup? Well, maybe that...!!!

Definitely a favorite, whenever it is served. My college-aged niece was astonished the first time she tasted it at a family gathering, so I buy the ingredients for her every year for Christmas. This has turned out to be a great gift idea for other friends, as well!
