5-minute Queso Dip

Here's a great little 5-Minute Queso Dip.
1 cup already shredded Pepper Jack Cheese
1/4 cup light sour cream
2 tablespoons light mayonnaise
Mix together in a microwave safe bowl and microwave on high for 2 minutes. Remove and stir. If cheese is not melted, stir and heat for 30 second intervals until hot and melted. Serve immediately with chips.
Makes 1/2 cup.
The recipe can be easily doubled or tripled, but it is best to heat only what can be consumed while still hot. As easy as this dip is, you can make batch after batch and not feel like you've worked an ounce.

that sounds really good with the pepperjack, I've made something similar with cheddar. Have you ever tried using kefir instead of sour cream?
