Featured Recipe: Italian Beef and Vegetable Stew
Though I’m often cooking for one these days, I still like to cook in big batches to freeze. Not only do I have my dinner with most of the work done, I have food to share, too. Both my daughters are now living in apartments near their university. On a restricted budget and with incredibly hectic schedules, their diet often suffers as a result. So I purchased a couple sets of plastic freezer ware and have been packaging “extras,” freezing them and sending them back to school about every six weeks. It’s like giving them building blocks to construct quick and easy dinners.
Italian Beef and Vegetable Stew uses the already-stewed beef to stir up a steaming hot, wonderfully filling beef and vegetable stew that can be served tonight or frozen and served later. (If you are using previously frozen Italian Stewed Beef mixture, I don’t suggest freezing the stew again.)
I have to say even though my girls aren’t around to eat dinner with me every night any longer, it’s still really nice to hear “Mom that beef stew was amazing!” even in a text message.

The thickness of stew is definitely a personal preference. Since you prefer a thicker stew, stir into the heating stew 1/4 cup of cornstarch mixed with 1/4 cup of the broths or water. Stir well until desired consistency is reached.

We've used this for sandwiches for the past two days and I think I'll make the soup tomorrow. Family all loved the beef flavor.

I recently made this receipe and found it to be extremely watery. The liquids did not cook down, I am more familiar with thickened stew and thought perhaps a thickening agent was needed. I used my crock pot for 10 hours and not much of the original liquid was gone. Would appreciate a comment on this. Thanks
