Can a gluten-free, vegan cookie not taste like the box?

Gluten free, vegan cookies just sound like a big why to me. But if you are gluten-intolerant or living a vegan life-style they may be an answer to your cookie dreams. Dr. Lucy’s Cookies ® sent me a few free samples recently and I promised to give them a try. Honestly, I looked at them on kitchen counter for a good week. And I can promise you cookies sitting on my counter don’t usually last more than a day. But I was a little afraid to give them a try. I wanted to like them, but was fairly confident I wouldn’t.
Then one day I poured myself a big glass of milk and opened each of the three flavors, bound and determined to eat at least one of each and keep an open mind.
First I tried the Ginger Snap flavor and was wowed by the crisp, crunchy texture and slight hint of ginger. Perfect . And I didn’t miss the gluten.
Next I tried the Maple Bliss. Although I think the name “bliss” is overstating it a bit, it too was a wonderfully textured cookie with just the right amount of maple flavor shining through.
I saved the Chocolate Cookie until last, thinking I’d be ending on high note. But unfortunately it fell a little flat for me. It was OK, but not what I’d really want to eat for my cookie pleasure. So I immediately went back to the Ginger Snaps, which quickly rose to the top of my list.
