It's hard to make a great salsa without fresh cilantro, as evidenced by this lovely pineapple version for summer.

I LOVE cilantro! My husband hates it. We have found a happy medium with it though...I can add it to certain dishes (like this salsa) and he just asks for me to not put so much in there that it looks like grass clippings! LOL!
