We've been known to cook an extra-big turkey just to have enough meat left over to make this classic dish. If you grew up eating this day-after-Thanksgiving classic, you know what we mean.

Once the feast is just a pleasant memory, strip down that turkey carcass and whip together another memorable meal in no time flat!

Well, I like to make some turkey sandwiches and turkey crepes. Sometimes, I add few turkey slices into fried rice or noodles too. What about you?

The sandwiches are a must, but I have to admit I’m a sucker for turkey soup. It’s a 2-part process, boiling the carcasses to make stock, then I de-fat it the next day; saute onions, carrots, celery; then add the broth. This year I put in 3/4 cup of quick-cooking barley and some mushrooms steeped in red wine that I had leftover from T-day. Also some corn kernels.

It was delish!
