Featured Recipe: Banana Pecan Mini Loaves
Announcing our first “random” contest winner here on Kitchen Scoop, and thanks to everyone who sent us favorite “add-ins” for banana bread recipes! An autographed hardcover copy of Desperation Entertaining! (supposedly a collector’s item) is going out to Anne Hestilow of Ocean Shores, WA. Here’s some of what we learned:
Anne likes to add cranberries and pecans to her banana bread, but we heard all sorts of flavor boosters – from chopped maraschino cherries to buttermilk, sour cream and yogurt, to rum, coconut and lime juice. Check out the comments at the end of our original blog post.
Then, from Amy in North Carolina came flaxseed and applesauce. One creative cook does a double-chocolate version with cocoa and chocolate chips. Makes us salivate just thinking about it!
