“New-Fashioned” Grilled Cheese Sandwiches

What are your favorite combos for grilled cheese sandwiches? We started experimenting after eating several “mod” versions at our favorite neighborhood sandwich shop and realizing that a hearty sandwich is a great way to fix dinner for one or two people.

It almost doesn’t matter what you add to a grilled cheese, so long as the flavors are bold, you’ll have a hit. Think of this recipe is a starting point, then get creative.

Here are some more of our favorite go-with’s for grilled cheese.

  • Bacon slices, sun-dried tomatoes and fresh basil leaves
  • Pickled jalapeno peppers and a dollop of bean dip
  • A smear of hummus and roasted red peppers
  • A shake of dried Italian seasoning and a sprinkle of Parmesan cheese
  • Deli ham and watercress leaves

I've been grilling cheese sandwiches in olive oil that I've heated on the pan and added different spices like rosemary, or garlic, or seasoned salt to the oil as it preheats. It really adds a nice new flavor to each sandwich.

Some of our favorites are: 1) Roasted Red Pepper 2) Slice of Raw Onion 3) Goat Cheese and Fig Jam - especially good on multi-grain 4) Love adding some Pepper Jack to American cheese to spice it up

We find more time to utilize items when in season, as well. He enjoys reading grocery ads and using coupons and I love that he has taken that over!
