The latest lesson: You can’t make a single serving of potato salad. Potato salad is a family feed, big picnic, tailgating for 10 kind of food. If you love potato salad and have a small family, better get to know your neighbors.
While I was coming up with recipes for my latest book, Potato Salad: 65 Recipes From Classic to Cool, just published by John Wiley & Sons, I was giving the stuff away to everyone I could think of, and the refrigerator was still crammed with bowls. Fortunately, I have a lot of hungry friends who do not mind serving as culinary crash-test dummies. Greek Potato Salad from the book is one of their favorites.

This salad from Debbie Moose's new book Potato Salad: 65 Recipes from Classic to Cool is tart and creamy, with the bite of feta cheese. A Greek friend said this was “just like Mom makes.”

Oh my goodness! How did I miss Kitchen Scoop until today? Have had Desperation Dinners for years -- we spend 6 weeks in Florida every winter and it is the only cookbook I take with me. Brunswick Stew is fabulous and tastes like it cooked for hours! Flake chicken is a favorite and I'm saving the black bean soup recipe forever!
Growing up in eastern NC, I know all about shelling butter beans and field peas and aren't they good in the winter?! Keep the good stuff going and I'll keep reading!

Thanks so much for the recipe! I made this last weekend for our bbq with friends and it was delicious. I got the potatoes and feta from the farmer’s market, so it was exceptionally good.
