Wish we could say our mistake was an April Fool's Joke, but alas, Marie-Jeanne of New Orleans corrects us on our Mardi Gras Faux Pas. Well, what better reason to share again our adaptation of the most amazing pancakes we've ever tasted!

Catching up on an e-mail backlog and just saw your post about pancakes on Fat Tuesday. As a native New Orleanian, I have to correct something you said.
Mardi Gras is French for Fat Tuesday. But, Fat Tuesday is not the "last day of Mardi Gras." There is only one day for Mardi Gras, and that's on Tuesday. Mardi Gras is the last day of Carnival, the name for the season which begins on Twelfth Night, January 6.
I do enjoy your posts and have tried several of your recipes. Just be sure when you talk about pancakes on Shrove Tuesday next year that you get it right! ![]()

Yes these pancakes were delicious. I'm trying to eat healthy currently, and Fat Tuesday definitely didn't help that. But what I did was take some of these fruits http://fruitsforweightloss.net/5-fruits-that-will-fill-you-up/ and put some of those on my pancakes. That way I was still eating something healthy and it tasted great also. I also try to feel like I'm eating healthy so that I continue to on the trend and don't lose course.
