Salmon with Pan Sauce

Wild-caught salmon is a lot leaner than farm-raised, so if I’m going to like it, the recipe has to have a bit of fat in it. Call me a wimp if you want, but my natural palate preference is for farmed. When we posted a blog about wild vs. farmed salmon a few weeks ago, (click here), lots of readers had pretty convincing arguments for wild.

This recipe for Salmon with Pan Sauce would be just as delicious with either type of fish since the hint of cream in the sauce makes up for any lack of fat in your fillet.

Which type of salmon do you tend to buy?

Hi, I’m dying to try using bottled chopped ginger for this salmon recipe (and others), but I cannot find it for the life of me.  I’ve been to 5 local grocery stores including 2 gourmet/ethnic ones. Do you happen to have an online supplier for it?

Hi Martie,

You should be able to find this ingredient since you live in a large area! However, a lot of supermarkets HIDE it!! It’s always found in the produce section, and so it might be best to ask the produce manager where it’s kept.

I know in my stores here in Miami, it’s often on a shelf near the floor underneath the fresh items. (Go figure!) There are a couple of brands…Spice World and Christopher Ranch.

Your produce manager should certainly be able to order it if they in fact do not stock it currently. I could not find an online source!
