You might think we’ve gone quiche crazy, and you might be right! Quiche is a wonderful item for Empty Nest cooks because you can make it ahead, it’s a wonderful vehicle for leftovers, the ingredients are easy to keep on hand and you can eat it morning, noon or night!
Oh, and did we mention that it’s ultra-easy AND you can freeze the leftovers?

This quiche is tall and smooth, with little other than cheese, onions and a bit of bacon to distract from a custardy center rich with eggs and cream.

From our email: Thanks for your quiche recipe. We have baked these for many years. It is so easy to create new variations. I would like to offer one small addition which does wonders to the quiche. This is to add a tablespoon or so of pan-cake or baking mix to the quiche liquid. You will see the effect immediately after removing the quiche from the oven. Instead of settling down as it cools, it will remain light and full and fluffy. Pop off the quiche ring pan and place it on the table and it is beautiful.
