Featured Recipe: Three-Cheese Mashed Potatoes
If a little bit of cheese is good, a lot is naturally better! You’ll never believe these mashed potatoes started out as a “convenient” product from the supermarket.
Refrigerated mashed potatoes have improved greatly over the years. When we started writing about them about a decade ago, the only brand we could be sure was nationally available was the Simply Potatoes brand. (And when we started writing our first cookbook, the only “convenient” mashed potatoes were frozen!)
Now you can find several brands of refrigerated, ready-to-eat mashed potoates in several flavors -- chives and roasted garlic are among the contestants in the mashed potato race. Even though these convenient products are vastly improved since the old days, we still like to do a little something to give them a gourmet slant. And our favorite add-in ever is cheese. Three kinds anyone? Yum~
