I am a breast cancer patient going through chemo. One of the exciting things i have learned while embarking on this anti cancer macrobiotic vegetarian diet, is that if I use dry beans, lentils etc and add a 3-6 inch strip of kombu, a seaweed available at like Whole Foods and others, it diminishes the gassy effects and adds great nutrition. Just don't eat it - it is rubbery.

Even your meat eaters will be satisfied with such a thick, rich chili. The texture is similar to “regular” chili, and the flavors are bold enough to transform this lowly, inexpensive legume to a real feast.

Love the bean recipes, as a diabetic, they are a valuable addition to my diet, as well as my pocketbook! Many bean recipes, however, are spicy, and as I have grown older (never old!), I find that I can no longer eat and enjoy spicy foods. I like that some of these recipes are not spicy. The flavor is good without my having to delete any “hot stuff”! Thanks. Hope you are well, Bev Aranki, Kansas City, Kan.
