What are your favorite sanity-saving tips for the kitchen? Here’s a great one from Maryann Di Pasqua of Williamsburg, Virginia:

A great way to peel and chop onions without tears is to put them in the fridge for at least 15 minutes, or even 30 minutes if possible. The longer they are chilled the better.

I really didn't believe this when I first heard of it, but it does work. I have even put them in the fridge in the morning when I know that I'll be using them for a recipe for dinner, and the longer chill doesn't harm the onion -- and chopping without eye irritation is great.

I've shared this with many family members and they all report the same results.

That's a new one for me, thanks... I have been using a fan blow the 'fumes' away, which can be helpful if you forget to prepare, like I usually do.

I buy chicken breasts in bulk when they are on sale or at the warehouse clubs and bring them home, spread them on a lightly oiled cookie sheet, spray the top with a quick coat of canola oil and place in the freezer for a few hours. Then I drop them in large zippered bags and can pull out the quantity I need for a meal.

Microwave lemons or limes for 10 to 15 seconds. Then roll them back and forth on the counter a few times. You will at least double the amount of juice you'll get out of each fruit!

When chopping onions, I will often chop a bit extra to have on hand for the next recipe. I place the extra onion in a zip lock bag in the fridge. I haven't tried freezing the onions, this might be an option for longer storage.
