Featured Recipe: Chili-Topped Potato Skins
What do you fix when the feast is finished? Dinners for the weekend after Thanksgiving are a challenge at my house. By Saturday the leftovers are kaput, yet with the kids still on hand, the festive mode continues.
But after Thursday’s marathon, who’s in the mood to spend hours in the kitchen? Not me! Any suggestions?

Thanks Ellen! I boiled my turkey breast carcasses yesterday with a bunch of celery, carrots, onions, spices, etc. It's in the fridge now, strained, and I'm going to add more onions, carrots and celery, but also barley and some mushrooms leftover from T-Day that I had simmered in red wine. No recipe, at this point, just an idea!

Just got finished with another "feast" of turkey enchiladas. No one thinks "Oh, turkey again!" even though we had turkey sandwiches for lunch. Soften some corn tortillas in the microwave, then roll up with grated cheese and chopped turkey. Put in a baking dish that has a layer of enchilada sauce (red or green) on the bottom, lay the enchiladas seam side down, pour the rest of the sauce on top and top with more grated cheese. Bake a half hour or so. Mmmm. Add a can of refried beans for a side and maybe some corn.
