Cooking Notes

If you’re serving adults only, you can substitute ½ cup of coffee liqueur, such as Kahlua, for ½ cup of the instant coffee. Simply use only 1 cup water with the same amount of instant coffee (it will be strong, but delicious), and add the Kahlua to the coffee before adding to trifle.

Be sure to buy “instant” pudding (the no-cook variety). If you can’t find devil’s food chocolate pudding, plain chocolate pudding is a milder, (but perfectly fine), substitute.

Check with the bakery manager at your grocery store for lady fingers (they are sometimes refrigerated), or substitute thin slices of purchased angel food cake.

A Trifle Tiramisu

2 tablespoons instant coffee granules
1½ cups water
4 cups lowfat milk
2 packages (3.9 ounces each) “instant” devil's food chocolate pudding mix*
1 package (8 ounces) light cream cheese (neufchatel), at room temperature
24 ladyfingers (two 3-ounce packages)*
¾ cup (8 ounces) semi-sweet mini chocolate chips
1 carton (12 ounces) reduced-fat nondairy whipped topping, such as Cool Whip
½ teaspoon cocoa powder, for garnish

Pour coffee granules into a glass measure with water. Microwave, uncovered, on high, 1 minute. Let coffee stand in microwave while proceeding with recipe.

Place milk, pudding mix, and cream cheese in large bowl of an electric mixer. Mix on medium speed until well blended. Set aside.

Split ladyfingers in half lengthwise. Place half of a package, cut side up, in bottom of a trifle bowl or glass bowl with a 16-cup capacity. Drizzle ¼ of coffee mixture evenly over ladyfingers. Spread about ¼ of pudding mixture over ladyfingers. Spread ¼ of the whipped topping over pudding. Sprinkle ¼ cup of chocolate chips over topping.

Repeat these layers 3 more times, ending with whipped topping. Sprinkle cocoa evenly over the whipped topping to garnish. Cover with plastic wrap, and refrigerate at least 6 hours (or up to 24 hours) to let moisture seep through and flavor to develop. Serve in dessert bowls.

A Trifle Tiramisu

A trifle bowl is a large (16-cup), straight-sided clear glass bowl on a pedestal. You can find trifle bowls for less than $20 in most mart-type and discount kitchen stores, and this modest investment will serve you well for years to come.

I like tiramisu and I like trifle. I make tiramisu frequently and am looking forward to make this for the holidays.
