Bacon Cheddar Garlic Biscuits

I used Bisquick ® brand biscuit mix for testing purposes. Check your brand to see what the proportion of biscuit mix to water or milk is for 12 biscuits and use those measurements (this recipe makes 18 small biscuits). Then add the indicated amount of bacon, cheese and garlic to the biscuits before rolling them out. Just remember that dough should be sticky, not dry.
Bacon Cheddar Garlic Biscuits
2 1/4 cup dry biscuit mix *
2/3 cup skim milk
8 slices already-cooked bacon, finely chopped
1 cup shredded Irish white cheddar cheese
1 teaspoon bottled minced garlic
1. Preheat oven to 425 degrees F. Spray a large baking pan with non-stick cooking oil spray or line with parchment paper. Set aside.
2. In a large bowl, combine all the ingredients. Biscuit dough should be moist and sticky. If not, add up to 2 tablespoons more milk, a little at a time, to mix until moist.
3. Turn the dough out onto a lightly floured surface and using a rolling pin, roll out to 3/4 inch thickness. Cut into biscuits using a 1 1/2 inch biscuit cutter or lightly floured small glass. Turn each biscuit onto a prepared baking pan.
4. Bake for 8 to 10 minutes, just until light golden brown. Remove immediately and loosen from paper or pan while still hot. Let them rest for 1 to 2 minutes and serve.
