SERVES makes about 4 dozen cookies - START TO FINISH: 15 minutes preparation, 1 hour chilling time, 10 to 12 minutes baking time
Best Ever Chocolate Chip Cookies
1 ½ cups all purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ cup firmly packed light brown sugar
1 cup granulated sugar
1 cup (2 sticks) butter
1 large egg
1 teaspoon vanilla extract
1 ½ cup old fashioned oats
1 cup semi sweet chocolate chips
1. Mix together flour, soda, cinnamon. Set aside. Using an electric mixer, cream together the sugars and butter until light and fluffy. Add egg and vanilla and mix well. On low speed, beat in the flour mixture just until blended. Stop mixer and fold in the oats and chips with a wooden spoon. Cover the cookie dough with plastic wrap and chill for 1 hour.
2. Preheat oven to 350 degrees F. Grease or line two baking sheets with parchment paper. Roll the dough into 1-inch balls and place about 2-inches apart on prepared pans. Bake for 10 to 12 minutes, or until light brown around edges. Cool on pan for 5 minutes then transfer to wire racks to cool completely.
Store in metal tins or foil wrapped platter.

Perhaps your refrigerator is too cold? The dough should be stiff, but not un-rollable.....
