Best Ever Chocolate Chip Cookies

1 ½ cups all purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ cup firmly packed light brown sugar
1 cup granulated sugar
1 cup (2 sticks) butter
1 large egg
1 teaspoon vanilla extract
1 ½ cup old fashioned oats
1 cup semi sweet chocolate chips

1. Mix together flour, soda, cinnamon. Set aside. Using an electric mixer, cream together the sugars and butter until light and fluffy. Add egg and vanilla and mix well. On low speed, beat in the flour mixture just until blended. Stop mixer and fold in the oats and chips with a wooden spoon. Cover the cookie dough with plastic wrap and chill for 1 hour.
2. Preheat oven to 350 degrees F. Grease or line two baking sheets with parchment paper. Roll the dough into 1-inch balls and place about 2-inches apart on prepared pans. Bake for 10 to 12 minutes, or until light brown around edges. Cool on pan for 5 minutes then transfer to wire racks to cool completely.
Store in metal tins or foil wrapped platter.

I tried these they taste great. I was not able to roll them after chilling for more than an hour. Why?

Perhaps your refrigerator is too cold? The dough should be stiff, but not un-rollable.....

via email: from Meryl - Made these. They were good -- best, no. It's easy to taste the oatmeal and cinnamon in the cookies -- two ingredients not traditionally associated with chocolate chip cookies. Kids aren't always fans of these two ingredients. Thanks for sharing the story and the recipe.

How long can I keep the dough in fridge before making cookies? Would like to make ahead of time for Christmas, so all I have to do is bake them on Christmas day. Tks.

You can hold them for up to three days tightly covered in the refrigerator...Merry Christmas!
