Caesar Salad Dressing

Juice of 1 lemon
1 clove garlic
2 tablespoons red wine vinegar
2 tablespoons Dijon mustard
2 teaspoons anchovy paste, or to taste
1/4 teaspoon black pepper
1/2 cup extra-virgin olive oil

  1.  Squeeze lemon juice into a 2-cup or larger bowl. Peel garlic and squeeze through a garlic press into bowl. (Or mince finely.) Add remaining ingredients except olive oil. Whisk well.
  2. Add oil in a thin stream, whisking constantly, until thoroughly incorporated and dressing thickens slightly. Use at once or refrigerate in airtight container for up to 3 days.
