This recipe contains no eggs.
Irene's Oatmeal Cookies
1 cup sugar
1 tsp. baking soda
1 cup flour
1/2 tsp. salt
1 cup butter
2 cups quick cooking oatmeal
1 tsp. vanilla
Cream butter and sugar. Add sifted flour, soda and salt. Add vanilla and then oatmeal. Drop on ungreased or parchment lined cookie sheets and bake at 350 degrees for 12 to 15 minutes. Cool and remove from baking sheets.

@Sue - I suggested buying the quick cooking oats...they are perfectly balanced and I am afraid old fashioned oats would change the texture.
