Cooking Notes

"Fresh-packed" fruit -- already peeled, seeded and recipe-ready -- is sold refrigerated and is typically located in supermarket produce departments. In jars, the most widely available brands are DelMonte and SunFresh.

Mango Salsa

10 to 12 strips jarred "fresh-packed" mango*
1/2 teaspoon crushed red pepper, or to taste
1 teaspoon minced fresh garlic
1/4 cup lime juice
Salt and pepper to taste 

Drain mango and cut strips into 1/4-inch dice. Place in a 3-cup or larger bowl. Add remaining ingredients and toss well to blend well. Serve immediately or refrigerate, covered in an airtight container, for up 1 week.

This versatile salsa works with grilled chicken, steamed vegetables, grilled or poached fish, and even chips. Beverly's mother Dot once spooned some on top of a tossed salad and declared it heavenly.
