Look for the mini tart shells in the supermarket freezer section near the phyllo sheets and the puff pastry sheets.

Mini Feta and Artichoke Tarts

15 frozen mini fillo shells, (1 box)*
2 large eggs
1/2 cup crumbled feta cheese
1 jar (6 1/2 ounces) marinated artichoke hearts, drained and chopped

Preheat the oven to 350 degrees F.

Place (still frozen) fillo shells on an ungreased baking sheet. Place eggs, cheese and artichoke hearts in a medium mixing bowl. Whisk well to blend. Spoon egg mixture into shells. Place in the preheated oven and bake, uncovered, for 20 minutes. Remove and serve.

If you can't find the filo shells, you can use wonton wrappers. Arrange them in mini-muffin pans & spray overhanging edges only with vegetable spray. Then fill & bake. Can't wait to try it with this filling.
