Nutty Muesli

“Quick” barley is also called 10-minute barley. For testing, we used the Quaker brand. The product is sometimes found on the cereal aisle near the oatmeal, but is often ,found near rice and couscous.
Muesli is good served cold in milk, (or refrigerated overnight soaked in a little milk). It’s also wonderful warmed in microwave like oatmeal. Serve with fresh fruit for even more flavor and healthy benefits.
Nutty Muesli
1 cup uncooked old-fashioned rolled oats (old-fashioned, uncooked oatmeal)
1/2 cup uncooked “quick” barley*
1/2 cup sliced almonds
1/2 cup walnut pieces
1/2 cup pecan pieces
1/2 cup dried cherries (or Craisins)
1/4 cup golden flax seed
Fat-free yogurt or milk, for serving, if desired*
Fresh fruit of choice, optional
Combine all ingredients and store in an airtight container until ready to serve.
To serve, scoop out ½ cup of the mixture into a cereal bowl. To serve cold, top with milk or yogurt, and let stand for a few minutes if a softer texture is desired. To serve hot, warm in microwave like oatmeal (*See Notes.) Top with fruit as desired.
Nutty Muesli
Muesli was invented around 1900 by a Swiss doctor named Maximilian Bircher-Benner for his hospital patients as an essential part of therapy. Alicia likes to soak the muesli, topped with milk, overnight in the refrigerator. Then she heats the moist, soaked muesli for a minute or so in the microwave to make a hot cereal and tops it with fresh fruit.
