Pear Spoon Bread
1/3 cup granulated sugar
1/3 cup light brown sugar, firmly packed
1 tablespoon butter, melted
3/4 cup baking mix *
1/2 cup evaporated milk
2 eggs
1 teaspoon ground cinnamon
1 large can (29 ounces) pear halves, drained and coarsely chopped
Ice cream for serving, if desired
Spray a 2 ½-quart slow cooker with cooking oil spray. In a medium bowl, combine sugars and baking mix. Add butter, eggs and milk. Stir in cinnamon and pears and pour into prepared crock. Turn cooker to the low heat setting and cook for 5 to 6 hours.
Spoon onto dessert plates and serve with ice cream, if desired. Leftovers keep, refrigerated, for 3 days. Re-warm leftovers in microwave and serve.

I am not 100% certain, but I think baking mix would be a product similar to Bisquick, or Pamela's Gluten Free Baking Mix.

We used Jiffy Baking Mix and is located on the baking aisle. Be aware, however, that this is NOT Jiffy Corn Muffin Mix (which is probably the best-known Jiffy product). It's possible that other brands/types might work.....
