Banana Chocolate Chip Bread

Recipe Directions

1/2 cup butter, softened
1 cup sugar
2 large eggs
1 cup very ripe mashed banana
1 teaspoon fresh lemon juice
2 cups all purpose flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup mini chocolate chips*

Preheat oven to 375 degrees F. Spray a standard size loaf pan ( 9 1/4 X 3- /4 X 2 3/4 inches) with cooking oil spray and flour lightly. Set aside.

With an electric mixer on medium-high speed, beat butter and sugar together until very well combined. Add eggs one at a time and mix until blended.

In a small bowl, mash bananas and stir in lemon juice. Add banana mixture to sugar mixture.

Sift together flour, baking powder and salt. Add flour mixture to mixing bowl and mix quickly on medium and just until fully incorporated. Stir in the mini chocolate chips. Bake for 1 hour in the preheated oven or until a wooden pick inserted into the center of loaf comes out clean. Remove the bread from the oven and allow to cool to room temperature before slicing or trying to remove the bread from pans.

* Cooking Notes

Using mini chocolate chips keeps chips from settling to bottom.
