Meatloaf Sliders

START TO FINISH: 20 minutes

8 ounces extra-lean (97 percent fat free) ground beef
1/4 cup finely chopped onion
1 large egg
1/4 cup plain bread crumbs
2 tablespoons low-fat milk
1/4 cup grated Parmesan cheese
2 teaspoons chopped fresh parsley, optional
1 1/2 teaspoons Worcestershire sauce
1 1/2 teaspoons Dijon mustard
1/4 teaspoon salt
1/8 teaspoon ground black pepper
2 teaspoon vegetable oil, such as canola
1/2 cup ketchup
6 whole wheat “slider” buns

In a medium bowl, combine all ingredients except oil and ketchup. Mix well. Form mixture into six (3-inch) patties.

Heat oil in a skillet over medium heat. Cook patties for about 4 minutes on each side, or until cooked through to desired level. Top patties with ketchup. Serve on slider buns.
