4 whole-grain “light” English muffins*
1 can (6 ounces) no-salt-added tomato paste
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried Italian seasoning
1/2 cup water
4 ounces (1 cup) part-skim mozzarella cheese
4 ounces thinly sliced deli ham, chopped
Preheat oven to 425 degrees F.
Split and toast English muffins. Place on a baking sheet, cut side up.
In a small bowl mix together tomato paste, garlic powder, onion powder, Italian seasoning and water. Spread sauce equally on each muffin half. Top with equal amounts of cheese and ham. Bake 8 minutes or until cheese is bubbly and melted. Serve at once.
For testing, we used Thomas’ English muffins.
