Roasted Butternut Squash Mash or Puree
1 pound butternut squash
Preheat oven to 450 degrees F. Cut squash in half and discard seeds. Place in a shallow baking dish, cut side up.
Roast 15 to 20 minutes, or until flesh is fork tender. Remove from oven and fluff flesh with a fork. Let cool for 15 minutes then use as directed in recipe. For puree: scrape flesh into a food processor or blender and process on high until pureed. Store, refrigerated for up to 1 week.
