Cooking Notes

Recipe can easily be doubled for larger crowds. If your skillet is not large enough to accommodate 2 pounds of asparagus, cook in batches.

Sauteed Asparagus with Garlic

2 teaspoons extra-virgin olive oil
1 pound pencil-thin asparagus, trimmed
2 teaspoons minced garlic
Salt and pepper to taste

In a large skillet, heat oil over medium heat. Add asparagus and garlic, salt and pepper. Shake skillet to distribute asparagus and garlic. Toss several times, and cook until bright green and slightly roasted on the edges, about 5 minutes. Serve immediately.
