Simple Parmesan-White Wine Sauce
1 tablespoon butter
1 tablespoon flour
1 cup fat-free, low sodium chicken broth
1/2 cup white wine
1/2 cup Grated Parmesan cheese
black pepper to taste
1. In a medium skillet, melt butter over medium heat. Stir in flour to form a paste. Slowly add, while whisking constantly, the chicken broth and wine. Stir and heat until almost boiling, steamy and slightly thickened, about 3 to 4 minutes. Stir in the cheese and black pepper and whisk well. Set off the heat until ready to use.
2. Leftovers may be cooled and refrigerated, covered, for up to 3 days. To reheat, measure out portions and heat in the microwave on high for 30 to 45 seconds.
