Simple Sweet Potato "Fries"

SERVES 4 - START TO FINISH: under 10 minutes active, 30 minutes baking time
Simple Sweet Potato "Fries"
2 large sweet potatoes, about 3/4 pound each
3 to 4 teaspoons olive oil
Optional seasonings: salt and pepper; ground cumin; cinnamon and brown sugar; chili powder; Chinese five spice; Apple or Pumpkin Pie spice, as desired to taste
1. Preheat the oven to 425 (for soft fries) or 500 (for crispy).
2. Scrub the potatoes well and dry with a paper towel. Using a very sharp chef’s knife, cut the unpeeled potatoes in half (length-wise), in quarters and then into strips. Place in a large bowl. Drizzle with 3 teaspoons of oil and toss to coat well. Add additional oil only as needed. Spread onto a baking sheet in a single layer.
3. Roast for 30 minutes, turning one time half way through. Remove from oven and season as desired, or pass seasonings at the table. Serve immediately.
