Sweet and Savory Chicken Salad

Strong cheeses, such as blue, gorgonzola or feta, work well.

Use leftover grilled or roasted chicken. Can also be found packaged in the supermarket refrigerated meat section. Or omit chicken for a fancy side salad.

Use our Easy Raspberry Vinaigrette or bottled.

Sweet and Savory Chicken Salad

6 cups mild salad greens, such as Romaine
1 cup bitter salad greens, such as radicchio, arugula or watercress
1 cup sliced carrots
1/4 cup sliced scallions (green onions)
1 cup chopped ripe tomato
1 cup fig slices or other sweet fruit, such as berries, pineapple or pears
1/4 cup cheese crumbles*
2 cups grilled chicken chunks*
1/4 cup raspberry vinaigrette*

Rinse and dry salad greens and mix together in a large salad bowl. Peel and thinly slice carrots, and add. Rinse and slice scallions, using all white parts and enough tender green parts to make 1/4 cup. Add to bowl.

Chop tomato (no need to peel), and add along with fruit and cheese. Toss well to evenly distribute ingredients. Divide salad among 4 dinner plates and top with chicken. Pass vinaigrette at the table.

 

Sweet and Savory Chicken Salad

This recipe is almost a formula, as greens, fruits and cheeses can be mixed at will. A sprinkle of nuts on top is nice, too. If we’re in a hurry or if there’s a sale we’ll use prewashed bagged salad greens for an especially easy meal.
